Induction Hobs Buying Guide

What is an induction hob and what are the benefits over a traditional hob?

Induction hobs are an electric cooking surface that consists of a flat ceramic plate topped with a layer of metal coils. It uses magnetic fields to generate heat quickly and directly to the cookware placed on top of it. The main benefit of an induction hob over gas or electric hobs is its efficiency; as energy is only generated when it comes into contact with the pot or pan, less energy is wasted than traditional hobs, if you look at a gas hob you can see the flames going around the pan - this is wasted energy. Additionally, induction hobs allow for precise control over temperature, ensuring your food always cooks perfectly.

How does an induction hob work?

Induction technology works by generating a powerful magnetic field between the hob and the metal pot or pan you place on top of it. When you switch on the power, an electric current passes through the metal coils, which in turn create the magnetic field. This causes eddy currents to form within any magnetic material placed on top of it, such as iron or steel pots and pans. These eddy currents cause resistance within the material, generating heat quickly and evenly directly to the cookware - without taking up extra energy.

What are the different features of an induction hob?

The main feature of an induction hob is its ability to reach temperatures quickly and accurately. They also come with a range of other useful features, such as: adjustable power levels; auto-shutoff settings; timer modes; keep warm functions; touch sensors for easy operation; and multiple zones for cooking multiple dishes at once. Most induction hobs also come with an energy monitoring system; this allows users to keep track of their usage and costs to ensure efficient use of the appliance. Some induction hobs are equipped with sensors that can detect when food is boiling over or burning - ensuring you never overcook your meals or over boil your potatoes again. Take the Innocenti ART29221 as an example, a great 90cm induction hob with all of the bells and whistles.
