Quick and Easy Weekday Meals

Dashing from the office to the polling station after work? We feel you; it’s been a long and busy day and now you need to make the most important decision you’ve made all year. But whatever you do, don’t see today out without voting!

The chances are, cooking an elaborate meal will be the last thing on your mind today, so here’s a few of our favourite quick and easy weekday meal recipes we think you’ll love. And not just tonight, but at least a handful of times during each working week. Enjoy!

Spaghetti Bolognese

Ah, good old spag bol – you just can’t beat it! It’s easy, quick and as far as weekday meals go, it’s fairly satisfying, too. We get that you don’t want to spend all evening slaving away over a hot stove, so we’ll forgive you if you instead fancy picking up a jar of sauce and cheating a bit.

But if you’d like to make things a teeny bit more challenging for yourself (but still very easy on the cooking front), try BBC Good Food’s easy peasy spaghetti Bolognese. It requires only a handful of ingredients and you’ll probably find that you already have most of them in your store cupboard or pantry. Oh, and you can make it even healthier by opting to add ‘courgetti spaghetti’ in place of the real thing.

Chicken and Leek Pie

We reckon tonight’s the night for some comfort food, do you? And if ever there was a meal to warm your cockles and make you feel all cosy inside, it’s creamy chicken pie. Okay, so it isn’t exactly the right time of year for steaming hot pies, but with the weather being so temperamental at the moment (and not at all summery – boo hiss!), we say get stuck in!

Thankfully, Delicious Magazine has a great little recipe that’s both easy to follow and inexpensive on the ingredients front. While it does take an hour or so to make, it’s still very simple to whip up – and once you’ve got the hang of this one, you’ll be rolling it out for dinner parties, too. Yeah, it might be easy but that doesn’t mean it isn’t tasty. Let us know if you try this one tonight.

It contains all the good stuff like double cream, wine, and pastry – yum! So, we didn’t say it was the healthiest but it’s certainly a winner amongst the My Appliances team.

Chicken, Bacon & Avocado Salad

Here’s one for those of you who’ve already kick-started their summer holiday diet: a relatively healthy yet ridiculously simple chicken, bacon and avocado salad.

A twist on a classic chicken Caesar salad, this one’s equally fresh and healthy and it’ll take you mere minutes to put together. We borrowed this recipe from Tesco.com (check out the site, as it’s absolutely jam-packed with quick and easy midweek meal ideas) and it’s one we’ll keep in our back pocket throughout the summer. We tried it post-gym and it was just the ticket – healthy enough yet surprisingly filling.
