Dairy-Free Eats and Treats for Summer

Dairy-free ice cream seems something of an oxymoron, doesn’t it? But we don’t want those of you who are lactose-intolerant (or those who are giving up dairy for another reason entirely) to miss out on one of the tastiest desserts of the summer! This week’s blog, then, is devoted to dairy-free treats and eats you can enjoy whatever the weather. Well, we can’t always rely on the sun, can we?

Dairy-free Ice Cream

So, if you’re longingly gazing at the ice cream below and wondering why on earth you can’t have one, stop your worrying! Jamie Oliver has come up trumps for all you dairy-free-ers (If that isn’t a word, it should be!) with this winning vanilla ice cream recipe.

Substituting cows’ milk for coconut milk, this sweet and satisfying ice cream also contains soya milk, agave syrup and vanilla bean paste. Serve yours with raspberries or strawberries for a top post-dinner treat!

 

Panna Cotta with Apricot Compote

Dairy-free panna cotta, you say? Absolutely! Just head to the BBC Good Food site to give this dessert a whirl. Like the Jamie Oliver recipe above, it also makes use of soya milk, which is now readily available in most supermarkets. Serving four people, this is the perfect summer pudding. Light and flavoursome, it’s made with gelatine, the zest of one lemon, a vanilla pod – and even a splash of rum! We know what we’ll be making the next time we throw a dinner party…

 

Strawberry Smoothie

My Appliances’ Lauren (who’s responsible for writing these blogs!) has recently gone dairy-free and loves this recipe for a winning breakfast smoothie. She ‘invented’ it herself, don’t you know – and she’s quite proud of it!

Ingredients:

1 medium banana

200ml rice milk or almond milk

handful of oats

teaspoon of honey

10 chopped strawberries

Method:

Add everything to a blender and blitz – yum!

If you’re not dairy-free, simply swap the rice milk to cows’ milk – and to make an even thicker smoothie, add a dollop of fromage frais. Feeling naughty? Substitute fromage frais for a scoop of ice cream. You can now get dairy-free ice cream in the frozen aisle, too, so make sure you look out for it.

Dairy-free Trifle

We bet you didn’t realise you could have trifle on a dairy-free diet, did you? Well, you can – and Sainsbury’s magazine has the method! This is the ideal post-barbecue dessert – just whip it out when everyone’s had their fill of burgers and sausages.

Serving eight people, this dairy-free raspberry trifle contains sherry, almonds, coconut cream and plenty of sugar – well, we didn’t say it wasn’t indulgent, did we?! Be aware, though, that the coconut cream needs to chill for at least six hours before you make the trifle – skip this step at your peril!
